We are in the process of remodeling our condo. We currently have no kitchen, so eating healthy is becoming a challenge. Whole Foods is always my go-to food option to enjoy a delicious salad bar (it seems to be the best option). However, even Whole Foods isn’t satisfying after almost three weeks without a kitchen. Needless to say, I am starting to get creative with my food recipes.

Salads are becoming the food of choice when you are having to cut your vegetables on a cutting board on your newly stained hardwood floors (they look great by the way!). I love a fresh and healthy salad.
Here is my new favorite salad. Quick, easy, and can be made without a kitchen!
Beet and Goat Cheese Salad
Ingredients
- Beets (Trader Joe’s has ready to eat roasted red beets – delicious!)
- ½ cup Walnuts
- Arugula
- Goat Cheese
- Balsamic Vinegar
Step 1 – Place a handful of arugula on a plate
Step 2 – Cut beets into cubes and place on top of arugula (you could salt and pepper here if needed, but I never do)
Step 3 – Mix in walnuts and goat cheese.
Step 4 – Drizzle with balsamic vinegar
This is so fresh and delicious. Easy and healthy.
